Hot and Exotic Shrimp Cocktail: AguaChile
Recipe for Aguachile, a spicy version of a shrimp cocktail. This dish is cured in a mixture of serrano pepper and lemon marinade.
2 Lb. Shrimp, butterflied
7 to 9 limes, depending on the size
1 tbsp. Black pepper
½ purple onion
1 ½ cucumber
¼ of an onion (red)
Handful of Cilantro
3 to 6 Medium size serrano chiles
Salt
Tostadas
1 ½ tomato (optional)
2 avocados (optional)

- Squeeze about 5 limes onto clean and butterflied shrimp along with the Black pepper and salt to taste. Refrigerate 1 to 2 hours.
- After 1 to 2 hours have passed, julienne your purple onion, cut cucumber into small squares and add both into your shrimp mix. Refrigerate for ½ to I more hour.
- Squeeze the rest of the limes into blender. Put the stems of the cilantro, ¼ of a white or brown onion, and the serrano peppers in a blender with salt to taste and blend until liquid. Add to the shrimp mix and stir well until fully combined. Refrigerate for I more hour or until well cooked.
- Cut avocados into little squares. Do the same to the tomatoes. Chiffonade the top part of the cilantro. Set all these ingredients aside in a separate bowl while you wait.
- Serve on tostadas, or if you like you can serve on a plate and eat with tortilla chips. Enjoy!
