Ingredients:
- 1 bunch Cilantro
- 1 pound cooked lentils
- 1 clove garlic
- 1 mango
- 1/2 cup olive oil
- pepper
- 1 purple bell pepper choped in small pieces
- 1 purple onion sliced
- Salt
- 1/4 cup white wine vinegar
Direction:
In a large bowl mix all ingredients with one another. Toss to incorporate everything together.
Store in a container and refrigerate leftovers, will last 2 to 4 days.
