Pineapple Coconut Shrimp

1 whole Pineapple cut into small pieces

1/3 cup toasted coconut

1 cup onion

1 tbsp garlic

2 tbs oil

1 tbs brown sugar

1 tbs salt

1 tbs pepper

1.5 lb. shrimp or prawn

Cilantro

Red Peppers (optional)

Banana leaves

Foil sheets

In a large bowl, mix; Pineapple, toasted coconut, onion, garlic, oil, brown sugar, salt, pepper, and shrimp, until all the ingredients are incorporated. Place Banana leaves on top of a foil sheet. Then, place about a ½ cup of the mix on each banana leaf and fold ends in. Finally, Place foiled banana leaf on skillet and cook for 4 minutes on each side.
