Oatmeal Cookies with Pumpkin Seeds

Oatameal Cookies with Pumpkin seeds

2 ½ cups of oats

2 cups Flour

¼ cup brown sugar

10 finely chopped, pits removed Medjool dates

1 tspn baking soda

½ tspn cinnamon

½ cup applesauce

½ cup coconut oil

2 eggs

1 tblspn vanilla

2 cups dark chocolate, chopped

1/3 cup unsweetened coconut

8 ounces of semi sweet or dark chocolate

1 tblspn butter or coconut oil

1 tspn maple syrup

In a large bowl add; oats, Flour, brown sugar, dates, baking soda, cinnamon, applesauce, Eggs, coconut oil and vanilla and mix well to incorporate all the ingredients.

Then, add the chocolate and coconut and mix.

Roll the dough into small balls,

place on cooking sheets and bake on 350 degrees for 12 to 15 minutes.

Under medium heat melt 8 ounces of chocolate.

Then, on a small skillet tablespoon melt butter over medium heat.

Toast the pumpkin seeds until they are light brown and add maple syrup.

When the cookies are ready add the pumpkin seeds on top and drizzle with melted chocolate.
