Components:
- 1 tsp baking soda
- one cup chopped cranberries
- two eggs, whisked
- 21/4 cups flour
- 1/2 cup oil
- 1 Tbsp pumpkin pie spice
- 1/2 tsp salt
- 1 cup Libby’s stable pack pumpkin
- two cups sugar
Guidance:
- Incorporate eggs, sugar, oil and pumpkin blend perfectly. Mix flour, pie spice and salt in huge bowl. Make a hollow depression in the middle of the mixture and Pour pumpkin combination into well. Stir just right up until dry components are moistened. Stir in cranberries.
- Spoon batter into two greased and floured aluminum loaf pans (8 x 3 three/four x two one/2 inches). Bake in 350 degrees oven for 1 hour or until finally toothpick comes out clear.
- let cool and top with whipped cream, buttercream or icing.
