Barley salad with veggies

Elements:

  • one eggplant
  • 1 zuccini
  • additional virgin olive oil
  • one onion
  • one red pepper
  • one cup salt

Instructions:

  1. Simply wash the veggies and cut them in small chunks.
  2. In a big pan cook with some more virgin olive oil right until tender.
  3. Season with salt and if you like with grounded pepper.
  4. Cook the barley in salted boiling water for 10 mins. Allow to cool with some cold drinking water and then toss with the veggies.
  5. An excellent summertime dish with lots of veggie. Enjoy.
