Ingredients:

  • 2 medium carrots peeled and grated
  • two stalks celery
  • 8 eggs
  • 1/2 cup additional sharp cheddar cheese
  • 1 fuji apple
  • three tablespoons olive oil
  • one/4 cup onion, diced
  • three smaller potatoes

Directions:

  1. Directions: Preheat oven to 375 levels. In a large pan incorporate thinly sliced potatoes in a solitary layer with 1 tbsp olive oil in miedium high heat. Cook for five minutes on both sides until browned, cook potatoes in batches if you have to.
  2. In the mean time crack the eggs into a bowl and whisk collectively with a splash of drinking water. Add in the carrots, celery, and salt.
  3. When the batch of potatoes are baking, thinly slice apples and onions. Insert to pan with a tablespoon of olive oil immediately after removing potatoes and cook until softened, stirring once in a while.
  4. When they are tender take them out of pan and add a tablespoon of oil and the egg combination. Layer apples, onions, and potatoes into pan and bake 10 minutes or until edges are nicely browned.
