Ingredients:
- 1 handful arugula
- 1/2 carrot grated
- 5 dried apricots remove the seed and cut into quarters
- juice of 1/4 orange
- zest of 1/4 orange
- 1 red onion
- 1/2 cup roasted lightly crushed cashew nuts
- 1 tomato
- 1 cup cooked wild rice
Direction:
Cut the the tomato small pieces. In a large bowl mix all ingredients with one another. Toss to incorporate everything together.
Store in a container and refrigerate leftovers, will last 2 to 4 days.
