Colourful Wild Rice Salad

Ingredients:

  • 1 handful arugula
  • 1/2 carrot grated
  • 5 dried apricots remove the seed and cut into quarters
  • juice of 1/4 orange
  • zest of 1/4 orange
  • 1 red onion
  • 1/2 cup roasted lightly crushed cashew nuts
  • 1 tomato
  • 1 cup cooked wild rice

Direction:

Cut the the tomato small pieces. In a large bowl mix all ingredients with one another. Toss to incorporate everything together.

Store in a container and refrigerate leftovers, will last 2 to 4 days.
