Maple-Bacon Corn Muffins

Ingredients:

  • four ounces bacon
  • one Tb. baking powder
  • one tablespoon melted butter
  • 2 eggs
  • 2 cups flour
  • two teaspoons Maple syrup
  • three tablespoons milk
  • 1 teaspoon salt
  • 1/2 cup sugar
  • 1 cup yellow cornmeal

Guidelines:

  1. Preheat oven to 400*. Heat a skillet to medium-high. Chop the bacon and cook until somewhat crispy. Remove from skillet and set aside.
  2. In a big bowl combine all dry substances. Whisk in the milk and eggs, followed by the melted butter, maple syrup and ¼ cup bacon grease.
  3. Stir the bacon items back in.
  4. Put muffin liners in a 12-cup muffin tin. Evenly divide the mixture into the liners. Bake for 15 minutes—until golden.
  5. Take out from the muffin tin to allow to cool down! Tends to make 12.
