Ingredients:
- four ounces bacon
- one Tb. baking powder
- one tablespoon melted butter
- 2 eggs
- 2 cups flour
- two teaspoons Maple syrup
- three tablespoons milk
- 1 teaspoon salt
- 1/2 cup sugar
- 1 cup yellow cornmeal
Guidelines:
- Preheat oven to 400*. Heat a skillet to medium-high. Chop the bacon and cook until somewhat crispy. Remove from skillet and set aside.
- In a big bowl combine all dry substances. Whisk in the milk and eggs, followed by the melted butter, maple syrup and ¼ cup bacon grease.
- Stir the bacon items back in.
- Put muffin liners in a 12-cup muffin tin. Evenly divide the mixture into the liners. Bake for 15 minutes—until golden.
- Take out from the muffin tin to allow to cool down! Tends to make 12.
