Ingredients:
- 1 cup cooked quinoa
- 1/2 cup gentle coconut milk
- three tablespoons crushed pineapple
- one/four teaspoon cinnamon
- one teaspoon maple syrup
- two tablespoons toasted coconut
- five pecans
- 1/2 cup sliced strawberries
- one teaspoon balsamic vinegar
Instructions:
- In a large pot mix cooked quinoa, coconut milk, crushed pineapple, cinnamon and maple syrup stir to mix. Allow to boil and cut down heat. Cook the entire mix for 5 minutes, stirring from time to time.
- Combine quinoa mixture with toasted coconut, pecans, sliced strawberries and balsamic vinegar.
