Tropical Breakfast Quinoa

Ingredients:

  • 1 cup cooked quinoa
  • 1/2 cup gentle coconut milk
  • three tablespoons crushed pineapple
  • one/four teaspoon cinnamon
  • one teaspoon maple syrup
  • two tablespoons toasted coconut
  • five pecans
  • 1/2 cup sliced strawberries
  • one teaspoon balsamic vinegar

Instructions:

  1. In a large pot mix cooked quinoa, coconut milk, crushed pineapple, cinnamon and maple syrup stir to mix. Allow to boil and cut down heat. Cook the entire mix for 5 minutes, stirring from time to time.
  2. Combine quinoa mixture with toasted coconut, pecans, sliced strawberries and balsamic vinegar.
